Mloukia — known across much of the Middle East as molokhia — is one of Tunisia’s most distinctive dishes. It is made from the leaves of the jute mallow plant, which are dried and ground into a fine green powder, then cooked slowly into a rich, silky stew. In Tunisia it is a home-cooked staple, served with bread and often with lamb or beef.
What does mloukia taste like?
Cooked mloukia has an earthy, gently vegetal flavour with a faint bitterness that mellows as it cooks. It is usually softened with garlic, coriander and a little tomato, and simmered until silky and thick. It is savoury rather than spicy — comfort food rather than heat.
How to cook mloukia
Traditionally the powder is whisked into water or stock so it does not clump, then simmered slowly with browned meat, plenty of garlic and fresh coriander until it thickens and darkens. It is served hot with crusty bread or rice, and a squeeze of lemon at the table lifts the whole dish.
Tunisian vs Egyptian molokhia
Tunisian mloukia is typically dried and sold as a powder, which gives a deep green, thick stew. In Egypt and the Levant the fresh or frozen chopped leaves are more common, producing a lighter, soupier dish. The Tunisian version is the one we stock.
